Scottish cream scones
1 cup dried cranberries or raisins(I've used mixed fruits
also figs and other yummie dried fruits) the recipe can also
be done with cheese, basil garlic so it is not a sweet bread.
1 cup boiling water
3 cups flour
1/4 tbsp.baking powder
1/2 tsp. salt
1/2 tsp. cream of tartar
1 stick(1/2 cup ) butter softened
1 large egg(room temp)
1/2 cup sour cream
3/4 cup whipping cream(I've used milk)
1 tsp. almond extract
sugar for garnish
cinnamon for garnish if desired
preheat oven to 350 degrees f
mix together flour, sugar, baking powder, salt and cream
of tartarin large mixing bowl.Cut in butter until mixture
resembles cornmeal,combine egg yolk(save whites)
sourcream,whipping cream,and almond extract, add to flour
mixture stirring until soft dough forms,turn out on to a
floured surface and knead for about 1 minute,sprinkle
with raisins or your dried fruits, divide in half shape into balls.
Place each ball on slightly greased cookie sheet flatten
to 7 inch circles, cut into pizza style wedges, whisk egg white
till frothy and brush surface of dough,sprinkle with
cinnamon and sugar bake about 20 minutes or until
golden brown.
