Breads and rolls
Hey I love to bake bread. Not in a bread maker but the kind you have to let sit for an hour or so. My family goes crazy when I make my Rosemary Herb Bread so I thought I would share the recipe for it becouse it makes the kitchen smell sooooo good.

2 packages of dry yeast
1/4 cup warm water
1/4 cup sugar
1 1/2 cups scalded milk
2 large eggs beaten
3 tsp salt
6-7 cups all purpose flour
1/2 tsp sage
3/4 tsp thyme
3/4 tsp rosemary
1 tsp parsley
1/2 cup shortening ( melted)

in a big bowl add water,yeast and a tbsp of the sugar let sit about 10 mins. Add the melted shortening to the scalded milk and add to the yeast add remaining sugar, salt eggs and 2 cups of the flour. Mix well and cover. Let rise in a warm place till bubbly ( about an hour )
Combine Herbs and add them to mix Stir in the rest of the flour to make a stiff dough. Knead on a floured board till satiny and elastic. Place in a greased bowl and cover return to the warm place to rise till it doubled in bulk. ( about an hour) Punch down and let rest 10 mins then shape. (I braid mine to a wreath ) place on pan and let rise till doubled in bulk ( about an hour and a half )

bake at 375*F till done (about 20 mins)

oh it is so good. My brother and step-dad will burn their fingers to cut it and butter it as soon as it comes out of the oven so they can have it while its hot and fresh. I like a big glass of milk with mine. YUMMY

Scottish cream scones

1 cup dried cranberries or raisins(I've used mixed fruits
also figs and other yummie dried fruits) the recipe can also
be done with cheese, basil garlic so it is not a sweet bread.

1 cup boiling water
3 cups flour
1/4 tbsp.baking powder
1/2 tsp. salt
1/2 tsp. cream of tartar
1 stick(1/2 cup ) butter softened
1 large egg(room temp)
1/2 cup sour cream
3/4 cup whipping cream(I've used milk)
1 tsp. almond extract
sugar for garnish
cinnamon for garnish if desired

preheat oven to 350 degrees f
mix together flour, sugar, baking powder, salt and cream
of tartarin large mixing bowl.Cut in butter until mixture
resembles cornmeal,combine egg yolk(save whites)
sourcream,whipping cream,and almond extract, add to flour
mixture stirring until soft dough forms,turn out on to a
floured surface and knead for about 1 minute,sprinkle
with raisins or your dried fruits, divide in half shape into balls.
Place each ball on slightly greased cookie sheet flatten
to 7 inch circles, cut into pizza style wedges, whisk egg white
till frothy and brush surface of dough,sprinkle with
cinnamon and sugar bake about 20 minutes or until
golden brown.

Cheese-Caraway Muffins
2 cups flour
1 tablespoon baking powder
2 teaspoons sugar
1 large egg
1 1/4 teaspoons salt
1/4 teaspoon dry mustard
1 cup shredded sharp Cheddar Cheese
1 cup milk
1/4 cup butter, melted and cooled
1 1/2 teaspoons caraway seeds
Preheat oven to 350. Sift flour, baking powder, sugar, salt, and mustard, then stir in cheese. In another bowl, whisk egg, milk, and butter. Add to flour mixture and stir batter until all ingredients are combined. Divide batter among 12 well-buttered 1/3-cup muffin tins, and sprinkle muffins with caraway seeds. Bake for 25 to 30 minutes, or until they are golden. Cool for 2 minutes and place muffins on a rack. Makes 12 muffins.
